Chicken Packets

My sister gave me this recipe a few years ago and it is a simple but hearty main dish that can be made the night before and then baked when it's time for dinner. Also, they can be frozen and pulled out as needed.

Ingredients:

2 packages (tubes) crescent rolls
2 or 3 chicken breasts cooked and cut up*
3 oz. cream cheese
2 tablespoons milk
butter and a few bread crumbs (optional)
salt, pepper, garlic salt to taste

*for a tastier version, use leftover baked/grilled chicken

1. Unroll the cresent dough so they are little triangles. Take two triangles and form them into 1 rectangle. Make sure you eliminate a seam. Place on an ungreased baking sheet.

2. In a medium sized bowl, mix the chicken, cream cheese, milk, and seasonings.

3. Place a dollop of the filling in each rectangle and close them up by placing another rectangle over them. (You can also use just one rectangle and fold over for smaller packets.)

4. Brush the packets with melted butter and sprinkle with bread crumbs if desired. Bake for about 20 minutes at 350.

Boy these sure are enticing! They sound like a great meal to give to a new (or newly pregnant) mom!

I'm glad I remembered to hop over here today. I haven't added this site to my google reader yet, so it was a fun surprise to find so many delicious-sounding new recipes!
