Bacon-Feta Chicken Rolls


4 boneless, skinless chicken breast halves

8 bacon strips, cooked and drained

1 cup crumbled feta cheese

2 red peppers cut into strips, sauteed

1/2 tsp. salt

1/4 tsp. pepper

1 Tblsp. olive oil

1/2 tsp. Italian seasoning


Flatten chicken to 1/4 inch thickness. Top each with two strips of bacon, 1/4 cup feta cheese, and some red pepper strips; sprinkle with salt and pepper. Roll up, starting with a short side, bringing the ends to meet. Tie at 1 and 1/2 inch intervals with kitchen string.


In a skillet over medium heat, brown chicken on all sides in oil. Transfer to an ungreased 8 in. square baking dish. Sprinkle with Italian seasoning. Bake, uncovered, at 350 degrees for 35-40 minutes or until chicken juices run clear.


I omitted the cheese, and also secured it all together with toothpicks since I didn't have any kitchen string. The toothpicks made it a little tricky when browning the chicken, but it was do-able. This tasted wonderful!
